David Lyon – Head Chef

David is a seasoned professional, renowned for his expertise in the catering industry. Alongside manager Karen Lilley he is the driving force behind the College Restaurant, Scholars. He has dedicated himself to preparing students for successful careers in industry with over 25 years of experience. David has acquired a wealth of knowledge and practical know-how that he imparts to his students, setting them on their own culinary journey.

David’s career in hospitality really began when he had the privilege of working under the guidance of Nigel Haworth at Northcote, a prestigious Michelin-starred Lancashire restaurant. This experience proved to be a transformative period in his career, as he honed his skills and developed a deep understanding of the industry. David’s time with the Northcote group provided him with invaluable insights into the particulars of running high-end establishments and a profound appreciation for food, attention to detail with high expectations.

With this experience, David has dedicated himself to fostering the next generation of culinary talent at Blackburn College. His passion for teaching and mentoring is evident in the way he approaches his role as a teacher. He understands the importance of hands-on learning and ensures that his students receive comprehensive training by involving them in all aspects of the restaurant’s operations.

Maria Marchese – Technician

Maria is the driving force behind our Food for Thought Cafe, where she not only manages operations but also provides students with valuable insights into the hospitality industry. Maria’s dynamic presence extends beyond the cafe as she occasionally spearheads internal events and lends a helping hand during service at Scholars. With her commitment to excellence and passion for mentorship, Maria embodies our ethos of fostering learning and growth among our students.

Chris – Chef Lecturer

Chris occasionally leads special evening events in Scholars, including popular themed nights and Christmas parties. He brings extensive knowledge and hands-on experience from a successful career in the catering industry, having run his own successful outside-catering businesses.

Passionate about sharing his expertise, Chris particularly enjoys working with Level 2 learners, giving them valuable opportunities to gain real experience in the restaurant. His keen and enthusiastic approach helps create an engaging, supportive environment where students can develop their confidence and culinary skills.

Ian Crook – Scholars Community Cooking Lead

Every Monday, Ian brings warmth, connection, and great food to Scholars through a weekly community cooking event. Working alongside his Level 1 learners, Ian helps create delicious meals for local residents — including many who may not often have the chance to get out and socialise. 

Ian is passionate about using food as a way to bring people together. Under his guidance, learners gain real-world kitchen experience while contributing to something meaningful. For Ian, it’s not just about developing culinary skills; it’s about building confidence, community, and a welcoming space for everyone who walks through the door.
